Vegan chocolate bliss
Two of my favorite foods: chocolate and avocado. Ever since moving to California, I order avocado on EVERYTHING. Being vegan for four years, I always make sure I get my daily dose of healthy fats. Coconut and avocado are two of my favorite sources. I’ve seen recipes and tasted the samples at the Whole Foods Vitamix demonstrations of this famous chocolate-avocado combination and I finally got around to trying it out for myself. I’m excited to share that from start to clean-up, this recipe will take you less than 10 minutes! Time is always a major deciding factor in my food preparation…anything more than 15 minutes and there’s a good chance I won’t do it.
You’ll need:
- 2 avocados
- 1/2 of a banana
- 1/3 cup organic cacao nibs
- 1/3 cup coconut milk
- 2 tsp vanilla extract
- 2 TBS agave
- A few dashes of cinnamon
Besides the healthy fat in the avocado, cacao has an incredible amount of antioxidant power, about ten times that of blueberries! It provides natural energy, supports heart health and protects our bodies form free-radical damage. I love keeping a bag around to add to my smoothies.
If you wanna get super fancy, check out my post on how we bottled our own vanilla extract! Or even make your own almond milk to use instead of store bought coconut milk.
Add all ingredients in a blender and blend until smooth.
