Cocunut tofu & kelp noodle stir fry
Being vegan, naturally I’m a health food junkie. With my love for bohemian fashion it may seem like most of my income is spent on clothes but in reality I go all out on organic, vegan super foods. And what’s better than your favorite delicious vegan cooking staples and goodies delivered right to your door? Any time I can cut out driving time in Los Angeles is key, so when I discovered Truly Organic, an online vegan and raw superfood store, I was ecstatic. My first package consisted of black bean noodles, coconut marinade, kelp noodles, salted caramel walnuts, and an Art of Raw coco & lemon meal bar.
Any recipe that is quick and can be loosely followed is my type of cooking. For your coconut tofu & kelp noodle stir fry, you’ll need:
- Veggies (I used broccoli, asparagus, snap peas, bean sprouts, onion, garlic, and baby portobellos)
- Package of organic firm tofu
- Coconut marinade from Truly Organic
- Kelp noodles from Truly Organic
- Handful of coconut meat
Use a tofu press to squeeze the excess water. Cut the tofu into small cubes, then marinate the tofu overnight in a zipped baggie with coconut marinade (enough to cover all of the tofu). If you don’t have all night, at least let marinate for an hour or so, but it’s so much better if you give it a day to soak.
Stir fry the veggies in a wok with some coconut oil. In a separate pan, sear the tofu so the sides are slightly browned. Slice the coconut meat into fine slivers and pan sear these until slightly toasty. Mix all together using some of the excess marinade from the bag of tofu to coat the veggies. Rinse the kelp noodles and add the tofu/veggie mixture on top.
This marinade is devine! Coconut marinade has 85% less sodium than soy sauce based marinades and it contains a great source of amino acids.

Kelp noodles are super low in carbohydrates and make a great substitute for pasta. Literally the “lazy girl’s pasta,” kelp noodles require no cooking, just rinsing!
Truly Organic makes their own line of products as well. These salted caramel walnuts are to die for and the caramel is made from 100% coconut! Can you tell I’m obsessed with anything coconut?!

Loving the kelp noodles–totally need to try these! I eat vegetarian most of the time, but my mom is a vegan, and I always get such good inspiration from her healthy ways of cooking too. I’ll pass these products along!
